Farmstand Frittata

Ingredients

6 ounces uncooked thin spaghetti
1/2 cup onion, chopped
1/2 cup red bell pepper, chopped
2 medium zucchini, sliced (1 1/2 cups)
2 tablespoons fresh basil leaves, snipped, divided
6 eggs
1/2 teaspoon plus 1/8 teaspoon salt, divided
1/4 ground black pepper
1 1/2 ounces fresh Parmesan cheese, grated, divided (about 6 tablespoons)
1 teaspoon olive oil
1 garlic clove, pressed
3 plum tomatoes, seeded and chopped

Directions

1. Break thin spaghetti into 2- to 3-inch lengths. Cook according to package directions; drain.

2. Meanwhile, chop onion and bell pepper with Food Chopper. Slice zucchini with Ultimate Mandoline. Snip basil with Professional Shears.

3. In Small Batter Bowl, whisk together eggs, 1 tablespoon of the snipped basil, 1/2 teaspoon of the salt and black pepper using Stainless Whisk. Add 4 tablespoons of the grated Parmesan cheese, grate with Rotary Grater.

4. In Executive (10-in.) Saute Pan, (do not use stainless cookware) heat olive oil over medium-high heat. Add onion, bell pepper, zucchini and garlic pressed with Garlic Press. Cook and stir 2-3 minutes or until vegetables are tender; stir in cooked spaghetti. Reduce heat to low. Pour egg mixture over pasta mixture in pan. Cover; cook 14-15 minutes or until egg mixture is set in center.

5. Meanwhile, combine tomatoes with remaininig 1 tablespoon snipped basil and 1/8 teaspoon salt. Grate remaining 2 tablespoons Parmesan cheese over frittata. Cut frittata into wedges using Nylon Knife.

Yield: 6 servings

Cook's Tips: With the spaghetti added, our frittata has a frim texture, making it easy to slice and serve. We are all stay at home moms with our first priority being our families.
We started out last fall with Peoria Holiday Boutique and have had so much fun watching our little show grow.  This is our third event and we look forward to so many more!

Healthy "Breakfast" Cookies

How many of you have kiddos heading back to school this week?
Or maybe just have super picky eaters?
Both are true in my house!

Here's a recipe for healthy "breakfast" cookies that you can made ahead of time...perfect to serve for breakfast or to pack in your littles lunchbox.  And they'll never know that they are getting a ton of spinach and blueberries into their cute little system.

Healthy Breakfast Cookies
(adapted from The Sneaky Chef)
First:
Make a flour mixture using equal parts all purpose flour, whole wheat flour and wheat germ.  I always do a minimum of a cup each, but I use this flour mix for lots of other things.  You only need 1.25 cups total for this recipe.

Then, puree (making as smooth as possible)
3 cups raw baby spinach leaves
1.5 cups of blueberries (fresh or frozen)
1/2 t. lemon juice and
1-2 T water
I usually will double or triple this (especially when berries are on sale).  I then freeze it in 1/4 c. amounts.  One batch makes 1 cup.  You need 3/4 c. for the recipe.

Then combine in order:
1 1/4. c flour mixture
1/2 tsp baking soda
1/2 tsp. salt
1/4 c. unsweetened cocoa powder
1 tsp. cinnamon
6 T. brown sugar
1 tsp. vanilla
1 egg
3/4 c. puree mix from above
6 T. canola oil
Powdered Sugar for dusting
(I also like to add a handful of chocolate chips to the recipe.  It's not necessary, but helps my super picky eaters believe they really are eating chocolate chip cookies for breakfast)

You could also easily add a few tablespoons of protein powder to the mix as well.  I may have to try that next batch...

Once everything is mixed well, drop by spoonfuls on a greased or parchment paper lined cookie sheet.  Bake at 350 for 12-14 minutes.  Remove from pan and let cool on a rack.  Dust with powdered sugar and enjoy!

I seriously let my children eat as many of these as they want.  I have one child who will willingly only eat peanut butter sandwiches with an occasional applesauce.  So for him, getting spinach AND blueberries in him is a BIG deal.

And word to the wise?  DO NOT EAT THE DOUGH.  It does not taste good.  Well, according to my husband anyway.  Once baked though, he scarfed down 2 or 3!  :)

What do you think?  How do you sneak healthy food into your super picky eaters?

Craft Show Etiquette

Here is a quick etiquette list for any craft show vendor.  If you're brand new to the craft show/boutique scene, this will be perfect for you!  It's also a nice reminder for seasoned vendors. :)

So.  In no particular order, here's what I would tell new vendors:

1.  Provide anything your event planner needs as it's asked for.  Vendor fees, applications, photos of your product and/or an image of your logo may all be things your event planners may ask for.

2.  Have questions?  Ask!  On of our events demanded vendors to provide their own tables.  However, one of our vendors was about to back out because she couldn't locate a table.  Once she explained her dilemma, we were more than happy to help her locate a table so she could keep her space.  Your even planners want to help you!  However, do keep in mind that the more favors you ask/demand; the quicker you're going to run out of favor.  Here's the bottom line.  Ask for help if you need it, but don't be demanding and needy.

3.  Make sure you are set up for the event ON TIME!!!  Nothing is more frustrating than to be ready to open the doors and realize you're missing a vendor or three.  Not only is it irritating for the event planners to have you setting up late, it's also rude to your fellow vendors and the shoppers.  It may also affect your table space/location as planners will rearrange last minute to hide any empty spots.

4.  On the flip side, DO NOT BREAK DOWN EARLY.  If your event runs until 5:00 pm, that means you are sitting at your booth with a smile on your face until 5:00 pm.  Perhaps later if there are shoppers still browsing.  When you signed up for the event, you made a commitment to be there for the full shopping hours.  Breaking down early to try to sneak out quickly just makes everybody mad and will probably hurt your chances for getting into that same show again later down the road.

5.  If you have to cancel your appearance at a show, let your event planners know ASAP.  Chances are good that there is a waiting list of vendors who would love to take your spot.  The sooner you know you aren't going to make the show (due to emergencies or you just change your mind about doing it), the easier it will be for your place to be filled.

6.  Lastly - HAVE FUN!!!  Craft shows are the perfect networking opportunity.  Kick back, relax and get to know your neighbors.  You may come away with a new best friend...or 10.

What do you think?  Did I leave anything out?  What are your biggest pet peeves as a craft show vendor?

Ch-ch-ch-changes...

We're sure you've probably noticed a pretty significant change around here...

our name.

We wanted something that could be universal; something that would hold well for any season and not be so confusing to our customers!

So.  Peoria Holiday Boutique (or Spring Fling by Peoria Holiday Boutique) is out the window.

Instead, we are simply
Bubblegum Bay Boutique.

We are so excited about things to come!  Shortly we will be announcing the location of our fall show (which will take place November 22, btw!).
Applications will start rolling out soon thereafter.

You can still find us on Facebook.  And our place on Instagram is still around too.
We hope you'll stick around...there will be much more to this blog than just information on our boutiques!
